Beetroot coconut salad

This healthy beetroot salad is quick and easy to make.

Ingredients:

  • About 400g of 3 red beets
  • Fresh grated Coconut 4 Tablespoons
  • Use three tablespoons of chopped cilantro/coriander leaves
  • Four tablespoons of roasted peanuts, slightly broken
  • Salt to taste or 1/2 teaspoon
  • About two tablespoons of lime juice or one lime
  • One teaspoon of sugar

Instructions:

  1. Cover the beets with water, whole and unpeeled. Boil for 25-30 minutes or until the beets are soft and cooked.
  2. Peel and dice the beets into pieces of 1/2 inch.
  3. Mix beets with coconut, fresh coriander, and peanuts. Add salt and stir.
  4. Mix lime juice with sugar and add to salad. Mix well.
  5. Serve immediately. If preparing ahead, salt beets and pour dressing. Refrigerate. Before serving, add coconut, coriander, and peanuts to prevent the coconut from discoloring.

Essential Ingredients:

It is important to include beets and coconuts. For the lime juice, you can use two teaspoons of vinegar – any vinegar but balsamic. You can replace cilantro with mint to get a different yet equally satisfying flavor.
