A few healthy ideas for the Christmas Table

Yes it is the day before Christmas but there is still time to whip up one of these healthy recipes for Christmas Day or over the holiday period. As you may have noticed from last week's post, featuring the Beetroot Coconut salad, I am loving festive red food this year and am experimenting with all kinds of reds. So here is another one for you....

Christmas Red Cabbage with Fennel and Apple (Antioxidant salad)

I love this colourful salad with its many shades of red. It is an excellent antioxidant, helping the body to fight free radicals. Both red cabbage and gojis are a rich source of vitamin C, A and E - making them powerful antioxidant foods. Pomegranates are also an excellent antioxidant, largely due to the punicalagins they contain. Punicalagins are also particularly good for heart and blood vessel health.

            



Red Quinoa Stuffing with Pistachios and Fresh Herbs

As a vegetarian I am always more interested in the things that accompany meat rather than the meat itself. This is probably what inspired me to come up with this quinoa stuffing recipe. On Christmas Day it can be used to stuff chicken or turkey, or for vegetarians you could use it to stuff a red pepper or other vegetables. I have always been a huge fan of quinoa and have experimented with it for years (particularly in salads). It is an excellent source of complete protein and is gluten free - it's great for carnivores and vegetarians alike. Oldie but a Goodie - Cauliflower + Greek Yogurt Salad
Yes you have probably seen this one on my site - I think I pulled it together almost a year ago. In saying that, I'm making it again for Christmas lunch as I love the festive colours and it is also very refreshing. Sydney has been so muggy lately we need some cooling foods.



               


Healthier Homemade Nutella - Teaser 
I have been making this scrummy Nutella with hazelnuts and raw cacao + other yummies. Unfortunately I have run out of time to write this one up but I do promise to share it in 2014 - maybe a nice one for Valentines Day :)
