Apricot coconut and lemon raw balls

These little balls of raw goodness are not only healthy but also very tasty. This recipe was tested. The lemon was added as a last-minute thought. It really gives the recipe a nice twist. The Apricot Coconut Lemon Raw Balls recipe is as follows:

INGREDIENTS:

  • 1/4 cup shredded coconut
  • 1 cup almonds
  • 1 cup sunflower seeds
  • 1 cup dried sulfur-free apricots in brown color
  • Half cup dates sliced
  • Coconut oil, 1/3 cup
  • The grated rind of two lemons
  • Lemon juice, 1 to 2 tablespoons
  • Honey or maple syrup, 1/2 cup
  • 1/2 cup chia seeds

PROCEDURE:

  1. Blend the shredded Coconut with almonds, sunflower seeds, and other ingredients in a food processor until you get a coarse powder consistency. Blend dates and apricots until smooth.
  2. Blend all ingredients until smooth.
  3. Roll the mixture into small balls using a dessert spoon. Roll the balls into desiccated Coconut and refrigerate them until ready to serve.
