Salad with Red Cabbage and Apples

This colorful salad is so vibrant with its many shades of pink. This is a great antioxidant salad that helps the body fight off free radicals. Red cabbage and goji both contain a lot of vitamins A, C, and E. They are powerful antioxidant foods. Pomegranates, which also contain vitamin C, are excellent antioxidant foods. This is mainly due to their punicalagins. The antioxidant properties of pomegranates are attributed to punicalagin; these compounds have a positive effect on the health of blood vessels and the heart.

INGREDIENTS:

  • Half a small red kale
  • Two small apples
  • One fennel bulb
  • One large handful of mint chopped
  • 1/2 pomegranate
  • Half a cup of goji cr, anberries, or pomegranate.

Dressing:

  • Red wine vinegar, 1/3 cup
  • 1/3 cup olive oil
  • Dijon mustard two teaspoons
  • Honey 2 Tbsp.
  • Half a teaspoon of salt

PROCEDURE:

  1. Add finely sliced red kale, grated apple, and diced fennel to a bowl.
  2. Add the pomegranate and goji (or cranberry) seeds.
  3. Mix dressing ingredients in a jar. Shake well.
  4. Dress and serve
