Gluten free pear and fresh ginger loaf

This is a delicious Gluten Free Pear and fresh Ginger Loaf. The subtle ginger flavor and sweetness of the pear are my favorite. The loaf is great for afternoon or morning tea, and it keeps for several days.


  • 2 1/2 pears
  • Gluten-free flour, 1 1/2 cups
  • Baking powder two teaspoons
  • Baking soda, one tablespoon
  • Freshly grated Ginger, one heaping tablespoon
  • Coconut oil, 1/2 cup (melted),
  • You can use rice syrup, maple syrup, or any other sweetener you like.
  • Two eggs
  • Half a cup of coconut or other milk
  • Pure Vanilla Essence (or Paste) – 1 teaspoon
  • Half a cup of dates (or figs)
  • Half a cup of walnuts
  • Sprinkle coconut sugar (optional).


  1. Preheat the oven to 180C fan bake. Set aside the loaf tin to be greased and lined.
  2. Add flour, baking soda, and baking powder to a large bowl. Mix and put aside.
  3. Combine vanilla essence, maple sugar, and coconut milk with melted coconut oil. Pour the coconut oil mixture into your flour mixture. Mix the eggs in.
  4. Cut 1 1/2 pears into cubes of 2 cm. Stir together the pears, Ginger, walnuts, dates and dates.
  5. Slice the pear lengthwise and place it on top of the mixture. Sprinkle a little coconut sugar on top (optional).
  6. Pour the mixture into a lined loaf pan and bake it for 45 minutes. Check with a knife or skewer to make sure it is clean.

Remove from the oven and cool on a rack.
